GWC Brie d'vine

Available exclusively through our Cellar Door, the Brie d'vine has proven a popular pick with its signature sweet, creamy texture. Dusted in Cabernet Sauvignon ash from our Loch Village Vineyard, the vine cuttings are collected and charred post pruning, before grinding to a fine powder and dusting the still young cheese.

This sterile, food-grade ash renders the perfect environment for mold growth and rind formation; and the combination of rich Wattlebank Farm milk and long maturation ensures the brie’s signature bloom, complexity and lingering aftertaste.

Cheese, like wine is a living snapshot from a particular place and point in time; reflecting its environment and continuing to develop and express its regionality.

Stunning with white sourdough and fruit, the brie pairs well with a lush white like our 2017 Westernport Chardonnay.
